Raw Cacao Mousse Pie

Good for your blood sugar and heart health, this delicious raw cacao mousse pie is filled with bioflavonoids, antioxidants, healthy fats and fiber to stabilize your blood sugar and insulin.

Most desserts with sugar and carbs cause a spike in blood sugar and insulin leading to sleep disturbances, inflammation, brain fog, fatigue, insulin resistance, weight gain and more.

You may eat this dessert without guilt and the worry that you may be causing metabolic disturbances in your system. It tastes as delicious as it looks.

Crust recipe:
In a Vitamix blender, combine 1/2 cup of walnuts with 1/2 cup of pistachios and 1/2 cup of pitted dates. Add 1/2 tsp cinnamon, 1/2 tsp cardamom powder, 1 tsp of vanilla, and a pinch of Himalayan salt. Blend together and then transfer to a pie dish and spread it out in to a pie crust shape. Refrigerate for 1/2 hour or until ready to pour the filling into it.

Filling Recipe:
In a vitamix blender, blend until smooth: 4 large avocados, 1/2 cup of raw cacao powder, 1 tsp vanilla, 1/2 cup of pre soaked dates, pinch of Himalayan salt, 1-2 tbs of maple syrup if needed for extra sweetness, 1/4-1/2 cup of plant based milk.

Pour filling over pie crust. Decorate with fresh berries and pistachios and allow to chill in fridge for a couple of hours before serving.
